Interview with one of the members of "Les Grandes Tables du Monde"

The inescapable, one-of-a-kind Philippe Chevrier is the gastronomic champion of the Canton of Geneva. Blessed with a Paul Newman-style gaze, this renowned chef has held two Michelin stars for the past 27 years and enjoys a 19/20 Gault & Millau rating. A longstanding member of Les Grandes Tables du Monde, he welcomes us into his magnificent flagship Domaine de Chateauvieux restaurant. Philippe Chevrier has made an indelible imprint on Geneva’s culinary subconscious, distilling his gourmet pleasure-oriented expertise into more than a dozen establishments in the city of Calvin and its surroundings. He continues to make his mark today, perpetually reinventing himself with the same passion, the same innate appetite for delighting his guests.

What does time represent within your profession?
Time for me is about precision – doubtless an inherently Swiss quality? Together with my teams, we have found ways of working with it, taming it and mastering it so as to enlist it as an ally of creativity and in pampering our clients’ tastebuds. We do not endure time, but rather use it mindfully as the invisible ingredient resulting in perfection or something very similar.

Which watch did you acquire to celebrate your first Michelin star?
I am very loyal and my watchmaking choices have always been Rolex models, which I view as representing the quintessence of mechanical precision, durability, an elegant, sporty style and quiet strength – much like Porsche when it comes to cars. It was the Daytona steel with a white dial that won over my wrist to mark the first star. A true marvel!

And for your second star?
Once again a Rolex, this time a steel Yachtmaster which is always a delight to wear, a timeless and discreet model that has been with me wherever I travel; I never go a week without wearing it.

Could you share a story about your passion for watches (Rolex)?
Yes indeed, it reflects my DNA of which loyalty is a cornerstone. Each of my employees receives a Rolex as a gift after 10 years of faithful service. For me, it's a heart-felt choice, bound up with Geneva and the region, symbolizing enduring values and appreciation of a job well done.

What if you were absolutely forced to choose a watch from another brand?
Do I really have to? I’m toast then! (laughter). Perhaps one choice comes to mind that wouldn’t be too hard to make: a Patek Philippe Aquanaut that is classic yet with a beautiful design, as well as durable, accurate and sporty… But don't say that too loudly, as I remain true to my brand with the crown logo!
